Spanish Thyme leaves

Spanish thyme, also known as Indian borage and Mexican mint, is a perennial herb from the mint family with origins dating back to Africa and India. During cooking, Spanish thyme leaves are often paired with rosemary, marjoram, oregano, mint, and sage. Keep in mind that Spanish thyme is an extremely aromatic herb that can easily overpower a dish, so use sparingly.
